I won't be working with her anymore, so it would be like a Thank You / Parting gift. What kind of gift do you think would be appropriate? Some kind of gift basket?

Gifts for that reason are generally not ethical. I don't think I'd do it. Perhaps take her to lunch someday after you have moved on, but that is "iffy" also.
