You don't need to buy in HUGE quantities. Just go to your local Sam's Club or Costco (or whatever is in your area) and buy the large packs of snacks. (i.e. Gardetto's, Sun Chips, Turtles chocolate truffles) Anything that is fairly nice looking and not too cheezy. We also got some more fancier things to dress up our baskets at the local World Market. Here's a secret: a wicker laundry basket only costs a few dollars and looks fancier than it sounds and no one has to know that it's a laundry basket. Also, shredded construction paper can dress up a boring basket.
