I would like to start a non profit organization that will help to provide families with children who are facing medical emergencies that have to stay in the hospital with care baskets filled with needed essentials like travel size toiletries, snacks, magazines, and pizza gift cards. As a parent of a child who has been diagnosed twice with cancer, I know how hard it is to get stuck in a hospital room unprepared and wishing I had something like this. Would this be a idea of a non profit???

This is a great idea for a non profit organization. In fact, many already exist that offer this type of assistance to families of sick children. An example of a well-known one is Ronald McDonald House. Lots of children's hospitals or hospitals that have popular facilities for children have their own foundations that provide this type of assistance. If the hospital in your area does not already do this, why not approach them and offer to help get a program started? Starting a non-profit is a time-consuming task (see other posts for details). Would you rather spend your time creating a program to assist families or on the administrative tasks of starting a non-profit? It sounds like you've got a passion for this cause and would suggest you spend your time advancing it. Hope this helps. Good luck!
