I am making a wine and cheese basket for a Christmas gift. I bought some smoked Provolone cheese (which was in the refrigerated section at the store) and I was wondering if it really needs to stay cold. Can I prepare the basket and wrap it now without refrigeration?

simple answer YES...if its a real cheese and not a processed cheese like Velveeta....it will develop mold if not refrigerated
