I'm doing baked goods for donation for gift baskets for soldiers coming home. They have to be turned in ahead of time for the baskets to be assembled and then they are going to be put in the soldiers' barracks rooms prior to their return. We don't know their exact arrival date, so it could be 7-10 days from it being baked before the soldiers would be home to consume them. I know the soldiers would love something that is something different from the ordinary from-a-mix-cookie, but I'm concerned that the banana bread being moist and sweet would mold before they got home to enjoy it. Any thoughts or ideas would be great.

it would start drying out and attracting bugs after just a day, so i'd suggest packaging in plastic foil or airtight containers, and keep in a fridge.
